Wholefoods is a buzzword in the health scene. Consumers are moving away from processed food and demand to more natural foods. In line with that, whole grains and ancient grains are making a comeback in the food industry; particularly spelt, amaranth, kamut, barley and emmer. According to Innova Market Insights, new product launches of ancient grains increased from 0.05% in 2007 up to 2.5% in the period between 2016 and 2017.
